Menu Plan Monday (April 15-21)

First up, we started seriously planning for when my mama and daddy are here this summer!!! I'm so excited.  They're going to spend a few nights at a cottage on Waimanalo Beach, today we booked the ATV tour at Kuuloa to do with my dad, and tomorrow I'm going to ITT to get our tickets for the Paradise Cove Luau.  What else should we plan for? Besides the obvious beaches and memorials and things like that, obviously.  My dad wants to snorkel and take a surfing lesson.  Any suggestions?

Okay.  Here's my menu plan for the week.  It's sort of tight for me, which I don't usually do, but I'm trying to keep up with Angela and her mad cooking prowess.  Not a lot of wiggle room, so I'm sure at least one thing is going to fall by the wayside.  Sorry Charlie.

Sunday: Thai chicken pizza, part of the A&J Tackle PW Challange.

Monday: gymnastics day, which  means crockpot day.  So I'm going to try this 3-2-1 Pot Roast that I got from one of my favorite bloggers, Meredith.  Meredith, if you're reading this for some reason, I want to apologize again for my harsh comments on pinterest.  I'm sorry.  Truly.

Everyone else, mind your business. I was a bitch, and I regret it.  What else is new?

Tuesday: Ranch style chicken and perfect potatoes au gratin, both part of the A&J Tackle PW Challange.

Wednesday: this is our night to celebrate a girl in my Bible study who just had a new baby, so we're making Mexican Bubble Casserole, which is a fantastic meal that my sweet friend Nicole made for us during our pack out in Guam.  It's super good, and hopefully super easy.  Remind me to post the recipe, if it's okay with Nicole.

Thursday: Chipotle Steak salad for lunch and BBQ Chicken and Pineapple Quesadillas, both part of the A&J Tackle PW Challange.

Friday: Sesame beef noodle bowls, part of- you guessed it- the A&J Tackle PW Challange.

Saturday: grill out.  Or probably, make whatever I couldn't get to during the week.

  1. First off: Ranch Style Chicken is one of my go-to PW recipes. I fricking love it. Also, it makes an awesome chicken sandwich.

    Second: I used to work at a Schlotzsky's Deli and I loved the thai chicken pizza but had totally forgot about it until now. Now I am craving thai chicken pizza and I can pretty much guarantee there is not peanut sauce in Spain.
