Santa Fe Fish Tacos (From Lovely Little Snippets)

I'm not going to say much because I'm still so pissed about the whole DMV fiasco, but I did want to share this since it was so yummy.  I got this from Lovely Little Snippets, one of my favorite food-type blogs.

Name this show.  I'm paraphrasing here, but you should still get it.  "You must be Rachel's...ah...friend...type...people..."

Anyway.  As usual, not sure how legal it is to cut and paste, but I added the link.  That's my go-to for getting out of copyright infringement.

Playing dumb is going to be my go-to for when I get pulled over and arrested for driving without a license.

Anyway.  This recipe looks so simple that I almost didn't make it.  Is that weird? Dumb, yes, but weird? Who knows.  Often, when a recipe is too simple (most of a certain someone's thirty minute meals, for example...), it's just not very good.  It's either bland or overpowering, and just...not good.

This is NOT one of those recipes.

I forgot the corn, and I only had one in a tortilla and today I ate two more as leftovers in a bowl with just coleslaw and fish and the dressing, and it was JUST as good.  And three points less.  So you decide, they're both great.

This is her picture.  Or his, I'm just assuming it's a woman.  I assume ALL bloggers are women, but surely there must be man bloggers out there.

Anyway.  I've never taken a picture of my food.  Because nothing I've ever made has looked like this.

2 4oz  tilapia fillets
1 tsp lemon pepper
1/2 tsp black pepper
4 small flour tortillas
1/2 cup corn
1/2 cup shredded cabbage

1/2 cup sour cream
1 TBS miracle whip
1/4 tsp taco seasoning
1 TBS lime juice
salt and pepper

Season tilapia with lemon pepper and black pepper, grill for 10 minutes or until fully cooked.
Mix all the ingredients listed for the sauce and refridgerate for 10-15 minutes.
Assemble remaining ingredients on tortillas and drizzle with sauce.
Serve with a squeeze of lime.

Word to the wise: Don't skip the 'serve with a squeeze of lime' part.  That's where the magic is.

And also, I used light sour cream and light miracle whip and it was fine.  Better than fine, it was fantastic.  And about six points, with the tortilla, three without.
