Menu Plan Monday
Let's just get right to the point because I'm not feeling the writing at all today. Sorry.
Monday: We had this baked artichoke chicken dish. Apparently it won some sort of contest on the Chew? But it was AWFUL. Just awful. The chicken was soggy and gross, I don't like artichokes, there was no flavor, it was just BAD all around. Ugh. This is why I *hate* trying new recipes from unknown sources. Ugh. I got it off pinterest. Wanna know how many pinterest recipes I've tried that haven't been any good? Probably hundreds. Maybe even thousands. I hate pinterest.
Tuesday: Crap. I got this beef stew off pinterest and it was TO DIE FOR. I'm also a big fan of PW's beef stew, but this one from Cooking Classy was slightly better. Don't tell Ree I said that. I only had this huge hunk of sirloin roast (I have no idea what different types of cuts mean, and I especially can't figure it out here, where they call them all something different) but whatever a sirloin roast is, it worked just fine. It was very tender, and I only simmered for a little over an hour because I got distracted with Call the Midwife and didn't start it as early as I was supposed to.
It's just beef and carrots and onions and celery and tomatoes (weird? I don't know, but it was GOOD) and potatoes. SO GOOD. This will definitely be in my regular rotation.
We need a scale of how good it is versus how easy it was to make. It was really good, and I threw it together while simultaneously making after school PB&Js and listening to the kids cry and hit each other and texting Angela. So REALLY EASY to make.
Wednesday: leftovers. Eh. Leftovers suck, but whatever, good for the environment and the budget blah blah blah.
Thursday: part of the A&J Tackle DALS, I made the oven fried chicken. This was SO FRICKING GOOD!!!
We really are going to post actual, detailed reviews soon, but for now, this was so good. It was bone in skin on pieces (I used drummies and thighs) marinated all day in buttermilk and grey puopon and garlic, then dredged in crushed corn flakes, then baked. It magically turned MEGA CRISPY and tasted SOOOOO good. I doused mine in Frank's and dipped it in ranch, but even without that, it was still so good. SO GOOD you guys!!!
Friday: salmon and potatoes from Jamie Oliver. You may or may not remember that I hate salmon. I hate all seafood, actually, except for McDonald's filet o fish and some brands of fish sticks. But you gotta eat it, and the kids like it, and Nick loves it, so every now and then I retry it to see if maybe my tastes have changed.
And with this, they just might have.
It was edible. I ate my whole piece without gagging.
Nick said it was good, but he didn't gush about it or anything. I think he would have rather grilled it. And he cooked it, so I don't really have anything to say about it, except it was good, and I like the taste of fennel (who knew?) and the potatoes were REALLY good. And the kids all cleared their plates without arguing.
Saturday we went to the Natural History Museum and ate out in London with friends, and Sunday we had some friends over for Hunter's Chicken. I don't know which recipe Nick uses specifically, so I don't want to add a link, but basically it's chicken breasts wrapped in bacon, topped with cheese, and baked. Chicken, good. Cheese gooood. Bacon GOOOOD. It's like the best ever, and mega easy.
